Rita pouring her “frascarelli” onto a board - its other name is “riso sul tavolo” (table rice). 🍚✨ Boiled rice is thickened with a little flour to make a porridge.
The ladies had two sauces to ladle over: wild fennel and sausage, 🥫🥓 and minced lardo + pancetta with a bit of chilli and tomato sauce. No need for plates, 🍴just tuck in with forks.
