Ingredients
• Meat free mince (1.5 cups) / ½ cup green lentils, dried
• 1 can chopped tomatoes
• 1 carrot
• 1 onion
• 3 garlic cloves, minced
• Spaghetti
• Salt and pepper
• Vegan cheese (optional)
Method
1. If you’ve got a pasta ladle with one single hole in the middle, the hole is the typical portion size for one portion of dried spaghetti. You can use it to measure out how much to cook.
2. Prepare your vegetables:
o Peel and slice the carrot in half, down the middle. Hold the sides together and slice all along the carrot.
o Peel and dice the onion
o Peel and mince the garlic cloves.
3. In a pan, heat some oil and sauté the onion, garlic and carrot.
4. In a separate pot of boiling water, add a pinch of salt and lay in the spaghetti. Push the ends in gently as they soften.
5. Using the same pan as the onion/garlic, add the mince/cooked lentils. Sauté until soft and translucent.
6. Pour in the chopped tomatoes. Let simmer on a medium heat for 15 minutes.
7. Serve over the spaghetti and sprinkle with vegan cheese if desired.
