Ingredients:
225g (1 1/2 cups) all-purpose flour
1 tsp baking powder
1/2 tsp salt
100g (1/2 cup) plant-based white chocolate chips
100g (1/2 cup) chopped strawberries
100g (1/2 cup) granulated sugar
100g (1/2 cup) unsalted plant-based butter, at room temperature
1 tsp vanilla extract
1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
Method:
1. Preheat your oven to 180°C (160°C fan)/350°F. Line a baking sheet with parchment paper.
2. In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
3. In another bowl, mix together the flax egg and let it sit for 5 minutes to thicken.
4. Add the sugar, plant-based butter, and vanilla extract to the bowl with the flax egg. Beat with an electric mixer until creamy and well combined, about 2-3 minutes.
5. Gradually add in the dry ingredients and mix until just combined.
6. Fold in 75% of the white chocolate chips and all of the chopped strawberries.
7. Drop spoonfuls of the dough onto the prepared baking sheet, leaving 5-7.5cm (2-3 inches) of space between each cookie.
8. Bake for 12-15 minutes or until the edges are lightly golden.
9. While the cookies are baking in the oven, place a dry, shallow, heat-safe mixing bowl over the saucepan. Add the remaining white chocolate to the mixing bowl. Turn on the stove to medium heat. As the water begins to simmer and release steam, the steam will heat the chocolate and the chocolate will begin to melt. Once melted, remove from the heat.
10. When the cookies are baked, take them out of the oven and allow the cookies to cool on the baking sheet for 5 minutes. Then drizzle the cookies with the melted white chocolate.
11. Transfer the cookies to a wire rack to cool completely.
