11 November is National Independence Day and the name-day of Poznań's patron, St Martin. 🇵🇱
An integral part of the celebrations on this day in Poznań are the Saint Martin's croissants with white poppy-seed filling. 🥐
The tradition of baking Saint Martin's croissants in Poznań dates back to 1891.
As the day of Saint Martin was coming closer, the priest of the Saint Martin's parish in Poznań appealed to the parishioners to follow the example of his patron and do something for the poor. One of Poznań's confectioners, responding to the pastor's appeal, baked croissants and brought them to the church. In the following years, he was joined by others so that everyone could eat to the full on that day. The rich bought croissants and the poor received them for free. ⛪️
The creation of the croissant is also accompanied by a legend: Once upon a time, a Poznań baker dreamt it up. He saw Saint Martin riding his horse in a dream, picked up the horseshoe his horse had lost, and decided to bake a pastry in that shape. 🐴
The tradition of baking Saint Martin's croissants on 11 November has survived in Poznań to this day. On that day, Poznań residents eat several hundred tons of it.
