With the snowstorm raging yesterday, it was the perfect time for a Sunday dinner of one of Beth Ellers (tbenterprisebeef.com) beef roasts.
I've purchased all my beef; roasts, steaks, ground beef, hot dogs and entire portions of a cow from Beth for the past couple of years ...and here's how I prepare and cook her roasts.

I start by bringing the roast to room temperature before poking 8-10 slits in it with a knife to hold the same amount of garlic slivers.
Then I coat the roast with olive oil and rub in generous amounts of salt & pepper.

I'll get my cast iron skillet hot on the stovetop with a bit of tallow or olive oil in it to sear each side for a couple minutes.

Then it goes on the middle rack in a 425 degree oven for about 20-30 minutes, depending on the size.

Turn the oven down to 225 without opening the door and cook it for a half hour before beginning to check the center temp with an instant digital thermometer.

I like mine rare so my goal is to remove it from the oven when the center temp of the roast is 125 degrees. It will continue to cook outside of the oven. Yesterday it was 119 when I first checked and went up to 129 ten minutes later. They've sometimes reached 150 degrees while resting for 30 min before slicing it.
The center of this 3.37 lb sirloin tip roast was red as I like it but pink closer to the edges for the rest of the crew.

Inventory update: We currently have a wide variety of LAPTOPS & DESKTOP PCs refurbished and on display.
I want to point out the HP Micro PCs, their size in relation to the pen, their amazing specs, and equally amazing prices.
Memory prices have doubled in recent weeks but we refurbished these machines before that occurred. If we had to refurbish these today, the prices would have to be much higher. Hurry in for best selection.

In the computer world, this Sony All-in-One LCD/TV Combo PC would be called vintage even though it's less than 20 years old (DOM April 2007).
We've refurbished it primarily because it's really a work of art. Note the glass frame around the screen and speakers.
It has a Pentium dual core 1.83GHz processor, 3GB DDR2 RAM, and 320GB HDD, wireless Internet, wireless keyboard and mouse.
It originally came with Windows Vista but we've upgraded it to Windows 10.

GREENBUSH COMPUTER FARE BUSINESS PROFILE 11-18-2025 UPDATE
Greenbush Computer Fare has seen many changes in the industry since opening 27 years ago. Owner David Crawmer began this journey in 1998 with the purchase of a pallet of government surplus computers from an auction at the Watervliet Arsenal and learned how to refurbish them Windows 3.1.

From there the industry went to Windows 95 and other Operating Systems that required expert hands-on installation. Microsoft was not capable of remotely updating and upgrading their operating systems at that point in time, which was a good thing.

Today the software giant tries to do their updates remotely and automatically by way of wireless Internet connections. This sometimes doesn't work out as planned and leaves customers with computers that require the hands-on repair of their operating systems from a qualified technician.

Consumer protection boards ought to be investigating this situation where a Microsoft warranty should be employed to correct defective service. All kinds of problems occur after Windows updates that leave computer owners stranded and unable to do their daily business on their computer.

Imagine other manufacturers getting away with this type of consumer abuse. Imagine driving your car to work, having the engine tuned up remotely as it sits in the parking lot and then not being able to start it to go home at the end of the day.

Imagine your refrigerator getting an update while you're at work and suddenly all your food is on its way to room temperature.

Imagine being a computer salesperson with a store full of laptops on display for customers to check out that routinely won't boot up because of an update.

What is so important that it requires continual updates? Is it really all about security or is it a matter of control? It's really not good for business but does Microsoft care? They have near Monopoly status but no one in government seems to care about accountability.

Many people are considering leaving Microsoft behind and moving to any number of Linux operating systems that are available for free. If you are one of those unsatisfied Microsoft customers, we would be happy to show you computers with Linux operating systems available at Greenbush Computer Fare.
