Homemade- Sweet & Tangy: Asian Plum Sauce

It is traditionally used as a dipping sauce for spring rolls, egg tolls, and fried chicken, or as a glaze and basting sauce for roasted meats. So good, I love the flavor! Another sauce to your list! Enjoy! Yum!

Ingredients:
2 cups fresh plums (slices)
1 cup sugar
1 cup apple cider vinegar
3 cloves minced garlic
3 tablespoons soy sauce
1 teaspoon salt
1/4 teaspoon Chinese 5 Spice
1/4 teaspoon ground ginger
1/4 teaspoon pepper flakes (optional)

In sauce pan, add plums, sugar and vinegar. Mix well and let it boil. Reduce heat and simmer for 15 minutes. Add the rest of the ingredients. Mix and let it simmer for 15-20 minutes until thickens.
Remove from stove. Let it cool for 10-15 minutes. Transfer to a blender or use an immersion blender. Blend until smooth. Ready to serve. Enjoy!

Will keep in refrigerator up to 2 weeks.

My version of Sweet and sour Sauce with Pineapple

So easy to make and it taste delicious!

Recipe:
1 cup pineapple juice
2 tbsp rice vinegar
3 tbsps ketchup
1/4 cup white sugar
1 tbsp soy sauce
3 tbsps water +
1 tbsp cornstarch
1/4 tsp black pepper

Steps:
In a large cup, add pineapple juice, vinegar, ketchup, white sugar, and soy sauce. Mix well and set aside.
On a separate cup, add water and cornstarch. Mix well and set aside.

In a saucepan, add the pineapple juice mixture. Whisk and mix till the sugar dissolves. Add the cornstarch mixture and mix well. Keep whisking in low heat to medium heat until the sauce thickens. Add ground black pepper. Mix and ready to use.

Store in refrigerator up to 3 days.

BLACK MAGIC CAKE

A cake as dark as midnight.

Ingredients

* 2 cups sugar
* 1¾ cups all-purpose flour
* ¾ cup unsweetened cocoa powder
* 2 teaspoons baking soda
* 2 teaspoons baking powder
* 1 teaspoon salt
* 2 eggs
* 1 cup buttermilk or sour milk
* 1 cup strong black coffee
* ½ cup vegetable oil
* 1 teaspoon vanilla extract

Directions

1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans or one 13 × 9 × 2-inch baking pan.
2. In a large bowl, combine sugar, flour, cocoa, baking soda, baking powder, and salt.
3. Add eggs, buttermilk, hot black coffee, vegetable oil, and vanilla.
4. Beat with an electric mixer on medium speed for about 2 minutes. Don’t worry—the batter will be quite thin.
5. Divide evenly between prepared pans.
6. Bake round cakes for 30–35 minutes, or a rectangular cake for 35–40 minutes, until a toothpick inserted into the center comes out clean.
7. Cool in the pans for about 10 minutes before turning onto wire racks. Allow to cool completely before frosting.

Mocha Frosting

* 3 tablespoons butter
* 3 tablespoons unsweetened cocoa powder
* 1 tablespoon warm water
* 1 tablespoon coffee-flavored liqueur (optional; strong coffee can be substituted)
* About 1½ cups powdered sugar

To Make the Frosting

Melt the butter in a small saucepan over low heat. Stir in cocoa, warm water, and coffee liqueur or strong coffee. Remove from heat.

Gradually beat in powdered sugar until smooth and spreadable. Add a little additional warm water if necessary.

Spread generously over the cooled cake.

Delicious Sesame Chicken

Crispy, juicy chicken coated in a sweet, tangy, and savoury sauce—this takeout favourite is quick to make and perfect served over steamed rice. It's a guaranteed crowd-pleaser!

Ingredients:
For the Chicken:
• 1 lb (about 3) boneless, skinless chicken thighs
• 2 eggs
• 1/3 cup all-purpose flour
• 1/3 cup cornstarch
• 1/4 tsp salt
• 1/4 tsp pepper
• Oil for frying (about 1/4 cup)

For the Sauce:
• 2 cloves garlic, minced
• 1 tsp fresh ginger, minced
• 4 tbsp sugar
• 1/4 cup soy sauce
• 3 tbsp ketchup
• 3 tbsp rice vinegar
• 1 tsp sesame oil
• 1 tsp cornstarch
• 1/4 cup water
• 1 tbsp sesame seeds (for garnish)

Instructions:
1. Prepare the Chicken:
In one bowl, mix flour, cornstarch, salt, and pepper. In another bowl, beat the eggs. Dip chicken pieces into the egg, then coat in the flour mixture. Set aside on a plate.
2. Fry the Chicken:
Heat about 1/4 cup oil in a pan over medium heat. Fry chicken in batches until golden and crispy. Drain on paper towels and set aside.
3. Make the Sauce:
Whisk together soy sauce, sugar, ketchup, rice vinegar, sesame oil, ginger, garlic, water, and cornstarch in a bowl.
4. Cook the Sauce:
Pour the sauce into a clean pan. Bring to a boil, then simmer for 1–2 minutes until slightly thickened.
5. Combine:
Add the fried chicken to the sauce. Toss until well coated.
6. Serve:
Sprinkle with sesame seeds and serve hot over rice. Enjoy!
