Out with the old, in with the new (solar-powered). All new:

Lots of stressing over details...

Plumbed-in new piping yesterday, trial run today.. This should save us $75-100/month(?), not powering the 220v Hayward EcoStar pump.

I have a hard time when people learn I eat a ketogenic-based diet, & tell me they "can't do that".. Usually preceded with, "I should really do/try that".

I have a hard time only because I'M the worst at self-control. I committed to trying keto, & I'm not going back because I've never felt this way.. this good.

Many a moons, I've caved & spent 10x the money for a Dairy Queen Blizzard because I committed to NOT having anything high-glycemic available in the house. And although I enjoyed the binging whilst shoveling them in, I felt taken for compromising frugality for a quick fix. But, I was able to commit again, when in the comfort of my home with its tasteless kitchen. That was the truth at 1st (tasteless kitchen), & we work harder sometimes to please the palette, but the hard work is fun if you enjoy cooking.. good cuts of fatty meat & lots of real butter make for incredibly tasty meals.

I don't crave sweets, breads, & pastas like I used to, but obviously I still like bread, & who doesn't enjoy heavily-buttered (keto) toast with eggs & bacon for lunch..? When I do eat lunch. Thanks for lunch, Babe!

I was worried... the brisket wasn't reddish, like I'm used to corned beef turning out. But, finished with grass fed butter & , it turned out great for St Patty's Day dinner. My wife enjoyed it, & my kids mostly did, too.

I asked if my eldest if she knew what the white pieces were, & she guessed, "fat?" ('cause she knows I obsess over fat, & how beneficial it is)..

brisket from Araivapa Canyon Ranch Beef (.com). (ed), pickling, then I added a fresh local cilantro, from my good friend Gary's cilantro bush in his front yard, & oregano, for a Mexican twist. We'll see how that turns out.

I'll add some organic green cabbage from & some lions mane mushroom, I also got from ,in about 7 hours.

Grass finished chuck roast from Aravaipa Canyon Ranch Beef (.com). I try to go to every Saturday to pick up the week's worth of beef.

I'll hopefully be setting up their Instagram & updating their website soon, as I want to share my experience with them.

This chunk of meat came out great with a side of broccoli, after sealing it with bacon grease, & baking it for about 3 hours at I-can't-remember-what-temp.
