Slow Cooker Pinto Beans, Green Chile, and Beef

Ingredients

1 lb dried pinto beans (see directions for soaking overnight)
4 cups water
3 lbs beef sirloin
2 tbsp vegetable oil
3 beef bouillon cubes

Crispy Beef & Cheese Chimichangas
Ingredients
1 lb lean ground beef
1 cup shredded sharp cheddar cheese
6 large flour tortillas
1/2 cup diced onion
2 cloves garlic, minced
1 tsp chili powder
1 tsp cumin
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 cup salsa
2 tbsp melted butter or oil for brushing
Instructions
Preheat oven to 400°F (200°C).
In a large skillet, cook the ground beef and onion over medium heat until the beef is browned.
Add garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute.
Stir in 1/2 cup salsa and simmer for 2–3 minutes.
Remove from heat and let the mixture cool slightly.
Place a portion of the beef mixture in the center of each tortilla.
Top with shredded cheddar cheese.
Fold in the sides and roll tightly into burrito-shaped chimichangas.
Place seam-side down in a greased 9x13-inch baking dish.
Brush the tops with melted butter or oil.
Bake for 20–25 minutes, until golden brown and crispy.
Sprinkle with extra cheese and bake for 2–3 more minutes if desired.

Tips
For extra crunch, lightly spray the chimichangas with cooking spray before baking.
Add refried beans to the filling for a heartier meal.

🔥 Acts 2:1-4 describes the birth of the Church with a precision that rewards careful reading — "When the Day of Pentecost had fully come, they were all with one accord in one place. And suddenly there came a sound from heaven, as of a rushing mighty wind, and it filled the whole house where they were sitting. Then there appeared to them divided tongues, as of fire, and one sat upon each of them. And they were all filled with the Holy Spirit and began to speak with other tongues, as the Spirit gave them utterance." Three sensory details. Sound. Sight. Speech. The Holy Spirit announced His arrival with a sound that filled a building, made Himself visible as individual fire on individual heads, and immediately expressed Himself through human voices in languages that broke every natural barrier standing between the gospel and the nations. The Church was born not in a committee meeting but in a hurricane. ✝️
For students of end times prophecy, Pentecost is not merely a historical event — it is the opening movement of the final act of God's redemptive plan. Peter stood up in the streets of Jerusalem immediately after the upper room and quoted the prophet Joel: "And it shall come to pass in the last days, says God, that I will pour out of My Spirit on all flesh." Peter did not say those last days were still future. He said "this is that" — this outpouring happening right now is the fulfillment of what Joel saw. Which means the Church has been living in the last days since Pentecost, and the Spirit poured out at Pentecost is the same Spirit being poured out with increasing intensity as those last days reach their culmination. The urgency of end times mission is inseparable from the power of Pentecost. The Great Commission was given before the Spirit came. The Spirit came so that the Great Commission could actually be completed.

😋 Homemade Refried Beans From Scratch 🤤🧄🔥
Once you taste creamy homemade refried beans made from REAL ingredients, it’s almost impossible to go back to the canned version. These are rich, buttery, perfectly seasoned, and unbelievably comforting — the kind of simple side dish that somehow steals the whole meal.

Prep time: 10 minutes
Cook time: 1 hour 30 minutes
Total time: 1 hour 40 minutes
Yield: 8 servings

Ingredients:

* 1 pound dry pinto beans
* 1 large onion, quartered
* 2 tablespoons lard or oil
* 3 cloves garlic, minced
* 1–2 teaspoons salt, or to taste
* 3/4 teaspoon ground cumin
* 1/2 teaspoon dried oregano
* Water, as needed
* Optional: shredded cheese for topping

Instructions:

1. Rinse the pinto beans in a colander and remove any pebbles or damaged beans.
2. Place the beans in a large pot, cover with water, and soak overnight.
3. Drain the soaked beans and return them to the pot with fresh water covering them by about 2 inches.
4. Add the quartered onion and a few pinches of salt.
5. Bring to a boil, then reduce heat, cover, and simmer for about 1 hour, stirring occasionally, until the beans are tender.
6. Drain the beans, reserving the bean broth. Remove the onion or finely chop it to add back later.
7. Heat lard or oil in a large skillet over medium heat.
8. Add garlic and cook for 30 seconds until fragrant.
9. Stir in the cooked beans, cumin, oregano, and 1/4 cup reserved bean broth.
10. Mash the beans with a potato masher or fork while stirring.
11. Add more bean broth a little at a time until the beans become creamy and smooth like soft mashed potatoes.
12. Taste and adjust salt, cumin, or oregano as needed.
13. Serve warm topped with shredded cheese if desired.

Pro Tip:
For ultra-creamy restaurant-style refried beans, mash them while they’re still very hot and add the bean broth slowly until they turn silky and smooth.
