Easy new recipe I tried last night. This recipe is very basic, delicious, and nutritious. Apparently they liked it because it looked like this before I could take it out of the pan. Lol!
HOMEMADE GRANOLA BARS

INGREDIENTS:
2 cups of raw oatmeal
1/2 c. brown sugar(or alternative brown sugar substitute)
2 Tbs. white sugar(or sugar free alternative)
1 1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon

1 C. low-fat or skim milk
2 eggs
2 Tbs. oil(I just used plain vegetable oil.)
1 tsp. vanilla

PROCEDURE:
Preheat oven to 350 degrees. Spray or grease an 8X8 pan. In a large bowl all all dry ingredients and stir well. You can also add extras here (see variations). In a separate bowl add eggs, milk, oil, and vanilla. Whisk together until seeds are well beaten. Pour this mixture into the fry mixture and stir until all ingredients are mixed well. Allow to sit in the bowl 10 - 20 minutes so the flavors all combine. Pour into prepared pan. Bake 30 min. Until golden brown on the edges. (Mine could have used another few minutes.)
VARIATIONS:
I used sugar free chocolate chips and some raisins. Probably about 1/2 c. each. You could use coconut, peanut, walnuts,almonds, or sunflower seeds. Be creative! They can be made sugar free or gluten free.
