Last night, after spending all day crunching the numbers, Kevin sat me down and gave me some good and bad news about Happymix Creperie.

The good? Everyone loves Happymix. Reviews are phenomenal (averaging 4.9/5 across all platforms) and 80% of our sales every week are from return customers (who over the past few months have become friends and a huge part of our community.)

The bad? We haven't been able to turn a profit. Most restaurants average about 2-5 years of burning through operating costs before they become profitable. We knew from the beginning we needed to turn profit by the two year mark, but start up costs got us real good... and sped up that timeline.

From finding asbestos and having to pay and wait for remediation, dealing with plumbing issues from old pipes during renovation, and even uncovering a leak in the alley that had been flooding the ground under downtown McKinney for years—possibly decades. (A problem that had been costing the city hundreds of thousands of dollars in municipal water being dumped.) Our build out phase took longer than expected, and so our holding cost doubled our original start up estimate.

Kevin runs a lean ship. His background is in accounting and finance, so he trims cost with precision. We have zero waste in our food and dairy. Every Saturday night it's been our little family cleaning the shop to save on cost, and Kevin waking up at 5am every morning to open up shop.

There's a few things you can do to help (if you feel led to):
1. Interact with this post. Comment, like, share. Get the word out.
2. Visit Happymix Creperie! Write a review after you've genuinely visited and tell others about us in person and online.
3. Prayer, advise from wiser more seasoned restauranteurs, and just words of encouragement.
4. Buy gift cards. Stop by and snag a gift card for yourself, your friends or family. They make excellent back to school gifts for local teachers!
5. Buy merch on our online store. (happymix.com)
6. Donate to our GoFundMe: https://gofund.me/ade90ccae
7. Rent our space for any parties you want to host on Sundays or Mondays. (Link to rent is on our website: happymix.com)

Happymix is a culmination of our life savings, planning, dreams, and sweat equity. We're not investor funded, it's just Kevin, me, our amazing team and our dream. So far that dream has been so well received - it just needs to be shared with the world so people know we are here!

If we’ve ever made you smile, inspired you, or if you simply believe that small businesses are worth fighting for, I hope you’ll consider standing with us during this season. No matter what happens, we're so grateful for the time we've been blessed with here. Thank you for allowing us to serve you and for believing in our dream.

With love,
Kevin and Callie

Most of my days in the ICU were endless blurs of pain and confusion as I fought for every breath I was blessed to be gifted… except for when I laid my eyes on Kevin.
♡
The room ceased spinning, pain melted away and suddenly I was safe. He’d draw near to me (because I couldn’t wear glasses and I’m blind without them) and I could smell him. That familiar Kevin scent. My comfort. Home.
♡
His gentle voice would repeat one thing over and over again: “I love you Callie, you’re in the hospital… but you’re getting better. I’m here, I love you.
♡
In between the bouts of pain, disorientation and utter despair there Kevin was. A bright shining light of comfort and joy. Some days I didn’t know we were married, other days I didn’t know who I was. But Kevin? I never forgot Kevin.
♡
When I finally came home insurance stopped paying. I still had wounds that needed daily cleaning and dressing, colostomy bag care, specialized equipment for the shower and bed that insurance wouldn’t pay for. And without once complaining Kevin stepped in. He was my chef, nurse, physical therapist, hairdresser, clothing dresser, wound care doctor… and so much more. All while taking me on dates, making our home accessible and taking care of and loving Kenzi Rae.
♡
Tomorrow will be our 15th year wedding anniversary. So, please allow me to be just a bit sappy this week. 🥹🥰😭 I love this sweet man of mine.

🎉 Facebook recognized me as a top rising creator this week! Not sure exactly what this means. But - sounds fun! 😂💕🥰

Love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control - Kevin radiates them so effortlessly. And I’m so blessed to call him mine.
♡
Kenzi and I were scrolling through old photos and videos last night when she said: “Mama, look how much Daddy loves you!” Suddenly I wasn’t just seeing the moments - I was studying them. The way his face lit up when he looked at me. The softness in his eyes before a kiss. The way his strong arms held my fragile body through that first year in the ICU… and how steady he stayed when I wasn’t. I was a puddle of tears.
♡
Building has meant late nights away from one another. Date nights we’ve rescheduled. It’s taken up a lot of our time and our mental space, but still… this incredible man finds time to bring home flowers, make dinner, take care of our home and spend quality time with me and Kenzi.
♡
I love this sweet man. I love the life we’re building together, and I’m so thankful for him. Maybe one day I’ll post something other than love letters to Kevin. But today is not that day. 🥰

One day that cute guy you’re dating might be the man you’re married to. And that man might be making life or death decisions for you while you’re on your deathbed in the ICU.
♡
Keep your standards high, and never compromise. 💕

It’s been a hot second since I’ve written my WHILL chair a proper love note… and today felt like the proper moment. 💕
♡
Between washing my face, brushing my teeth, and getting my daughter ready for her very first overnight school camp this morning (excuse me??? how is that even allowed?? 😭)… I found myself simply overwhelmed with gratitude.
♡
Like… deep, pause-in-the-middle-of-your-morning kind of gratitude. And right at the top of my gratitude list (mobility-wise)?
♡
My .
♡
This little powerhouse gives me freedom in ways I don’t think I’ll ever fully get over.
♡
At home, I’m rolling through mom life. At , I’m weaving between tables, popping into the kitchen, hugging customers, and scooting around our sweet Downtown McKinney community like it’s nothing.
♡
And then I think about things like… hopping on a plane to California?! 🤯
♡
The airline loads up my chair, and a few hours later I’m exploring the coast - independent, free, not needing Kevin to push me around. Just me and my wheels taking it all in. 🥹
♡
I’m thankful because… it wasn’t always like this. When I first came home from the hospital, I had one of those foldable manual chairs… stiff, heavy, uncomfortable, and I was totally dependent on someone else to move me. It limited where I could go, what I could do, and honestly… how much of life I could experience.
♡
Now? I’m a business owner.
I’m a mom - fully, completely, actively.
I’m rolling across muddy soccer fields, gliding through grocery aisles, and living life in motion.
♡
Mobility is such a gift. A big, beautiful, life-opening gift.
♡
So yeah… this is my little love letter to my WHILL chair. To the freedom it gives me. To the life it helps me live, fully and joyfully, especially on the days my legs just aren’t cooperating.
♡
Also… can we talk about the silhouette??
Like… why is it low-key the coolest, most futuristic thing ever. 😌

From high school sweethearts → newlyweds → new parents → losing our son, and nearly my life… now we’ve entered a new phase of our adventure: owning a restaurant! ()
♡
Kevin’s character arc really ought to be studied. This man had never cooked a day in his life (because I LOVED to cook) then… sepsis nearly took me out. When I finally came home I couldn’t sit up, so I certainly couldn’t cook. So what did Kevin do? He taught himself.
♡
He’s been making every meal for our family for nearly a decade now, and our favorite meal is crepes! We’ve dreamed of opening a creperie for a decade. But, that’s a crazy big dream… right? It could never come true… could it?
♡
After countless hours designing, demoing, building, planning, testing, creating, failing, succeeding, and never giving up… we were finally able to open ‘s doors about a month ago for our soft launch.
♡
We’ve learned SOOO much in this past month. Like: how many gallons of milk can fit in my car’s cooler. (The number is 8 if you’re curious) 👀 How little amount of sleep we can survive off of until our body starts forcing us to sleep. (We can’t pull off more than 5 consecutive days of only 2 hours each night.) Why it’s important to buy cups in bulk (we’ve run out and had to scramble across DFW multiple times to find more.) 🤭
♡
We’ve also learned how incredible our community is. Showing up day after day, celebrating birthdays and sharing their special moments with us. We’ve learned at juuussstt the right hour an iridescent rainbow appears in two places in our shop. 🌈 That people REALLY love our banana cloud matcha. 🍵 AND that our bathrooms… with two different colored toilets… is a delight to find. 💕💚
♡
What an honor it’s been to serve the McKinney community for the past month. Thank you all for the love and support. We appreciate you! And shoutout to our incredible team. We love you guys.
♡
And now… please… without further ado enjoy this reel dedicated to the very best husband, father, boss, creperista, matcharista, bobarista, carpenter, remodeler, and toilet unclogger there is: Kevin Alan Colwick.
